The Dining Room
Hotel Paulin Dining Room offers it's guests the same intimate old world charm as it has always done since 1891. The old wooden furniture and the many tall windows radiates beautiful natural light. The licensed dining room seats 40 and specializes in regional foods with a table d'hote which changes daily.

The Cusine The cuisine is modern, up-scale and is presented with a creative style by the Chef de Cuisine, Karen Mersereau, co-owner and partner to Gerard Paulin. Karen, also a Professional Home Economist, has 17 years experience in the food industry, as owner of Food Talks Inc., a Toronto marketing agency, specializing in food Styling, recipe develpment and food photography. Gerard Paulin is the Maitre d'hotel, your personal host professional waiter and bartender. Gerard Paulin has been operating Hotel Paulin since 1974 and is the third generation of Paulins operating the hotel.
